BAKED SWEET POTATO BITES

IT’S ALL ABOUT THE BUTTER…AND BURNED PIECES…

…that make this recipe super yummy. Actually, if I’m going to be honest with you, this is the best way to eat sweet potatoes. Ever. These cute little Baked Sweet Potato Bites should be classified as finger food, since you will gobble them up so quickly.

 

Cooking them in butter turns the inside of the cubes nice and soft, while the outside is crunchy and chewy…at the same time. Don’t worry about the burned bits…that’s how you know you’ve made ’em right!

 

These are easy, fast, yummy, and healthy. You really can’t ask for more than that. So, in typical Nebraska fashion, serve ’em up as a side to a big ‘ol juicy piece of steak.

 

Skip the fork if you want, I won’t judge.

 

NOTE: There will never be any leftovers, so please don’t expect to save any back for lunch tomorrow. They will be gone.

 

BAKED SWEET POTATO BITES

  • 4-5 Sweet Potatoes
  • 1 Tablespoon real butter (I split in 1/2)

INSTRUCTIONS

1. Preheat oven to 400°. Peel sweet potatoes.

2. Cut sweet potatoes into small cubes.

3. Place in a 9×13 glass baking dish and throw on a couple dabs of butter.

4. Total cooking time will be 60-90 minutes. Place in oven for 20 minutes and then stir the potato bites in the butter. Cook an additional 20 minutes and stir again. Return to oven and cook for another 20 minutes. Check every ten minutes after that. 

5. Baked Sweet Potato Bites are done when they have crisped and blackened up.  

NOTES:

  • This is probably the only time you will ever hear me say skimp on the butter!  Using too much butter will make your sweet potato bites mushy.
